Mango Salsa

2 ripe mangoes, cubed

1 medium shallot, minced

1 serrano pepper, minced

cilantro, chopped to taste

Stir all ingredients together.  Let sit for 1 hour to allow flavors to blend.

Pico de Gallo

2  medium tomatoes, chopped

1 serrano pepper, finely chopped

2 tbsp. lime juice

1 medium onion, chopped

1/4 cup cilantro, chopped

salt to taste

Toss all ingredients and chill one hour.  Serve with tortilla chips.
